Hello again! We’re meal hacking on Mondays to encourage healthier eating and weight loss.
We are big fans of this Taco Soup from Ruth at Living Well Spending Less (click the link below to be re-directed to her original recipe and notes). It’s super easy to prepare as a freezer meal, cooks wonderfully as a crock pot recipe, and at 6 points per serving is out-of-this-world delicious.

Additional Recipe Notes:
- The Weight Watcher points for this meal substitutes ground turkey for ground beef and excludes the sour cream in Ruth’s original recipe.
- I buy my taco seasoning in bulk from Costco so I swap out the 2 packets for 2.5 ounces.
- If you’re prepping for a freezer meal, you will divide the batch in half.
- I’ve portioned each of my halves to serve 5.
