Sassy Crock Pot Beef Stew
One of Mike’s favorite dishes my Mom makes is Weight-Watchers Beef Stew. The original recipe is fantastic, but because I was working with limited ingredients one night (i.e. lack of planning!), I came up with an alternative stew recipe that we LOVE. It’s got a little more zing than the original but is just as easy to make and equally calorie friendly.
Ingredients
1 lb. boneless beef stew meat
1 lb. potatoes
1-16oz. bag baby carrots
1/2- 12oz. bag of frozen corn
1/2-12oz. bag of frozen onion
1-24oz. jar of mild salsa
1/2 cup red wine vinegar
1 tbsp balsamic vinegar
1/4 cup wheat flour
1/2 tsp salt
Garlic powder to taste
Directions
1. Spray large crock pot with cooking spray.
2. Combine all ingredients in crock pot and stir.
3. Cover and cook on high for 5-6 hours.
4. Serve with Egg Noodles and Parmesan Cheese.
