[non-alcoholic] Peach-raspberry Bellini
This Peach-raspberry Bellini is hands down my favorite blended smoothie we’ve made in our Vitamix. It’s super simple to prepare and has an addictingly sweet zing even my two year old was helpless to resist.
Mom bought us a groupon for sampler bottles at Oh, Olive! and while selecting my vials of balsamic vinegar I noticed their Peach White could be used in a non-alcoholic Bellini. I didn’t grab the card, but with a little help from Food Network’s archive of recipes, I made my own – smoothie style. I can’t justify the cost or the calories for an every day (or every week) treat, but we’ll be pulling this out again for special occasions. Guaranteed.
Ingredients
- 1 cup fresh raspberries
- 3 fresh peaches – quartered, frozen over-night, and slightly thawed
- 1/4 cup sugar
- 1 can Sprite
- 4-1/2 tablespoons Peach White Balsamic Vinegar (or the 60-ml sample bottle from Oh, Olive!)
Directions
Combine ingredients and blend in Vitamix. Makes four servings (slightly smaller than shown).
