Fast and Easy Ice Cream Cake
We celebrated Mike’s birthday on Sunday with a very yummy, very easy cookies-n-cream ice cream cake. It literally took me less than 10 minutes to prep and judging by the fact we had none left, I’d guess it was a huge hit at the party!
Ingredients
25 smashed Oreo Cookies
1/3 cup melted Country Crock
1.5 qt. thawed TCBY Cookies and Creme Frozen Yogurt
5 smashed Oreo Cookies cookies for topping
Hershey’s Chocolate Syrup
2.5 qt. freezer safe Corningware container with lid
Directions
1. Combine 25 smashed Oreos with melted Country Crock and press into the bottom of the Corningware container.
2. Spread thawed ice cream/frozen yogurt over crust.
3. Add 5 smashed Oreos as topping and drizzle Hershey’s Chocolate Syrup on top.
4. Cover, freeze overnight and enjoy!
Notes & Variations
We cut our cake into 16 pieces and that size piece was sufficient to serve alongside some of the additional goodies we had at the party. I would plan to double it if this was the stand-alone treat at a party.
I’ve already been enlisted to make an ice cream cake for Elijah’s birthday party (in January!). I look forward to mixing candy pieces into the thawed ice cream and experimenting with colored frosting on top.
