Big Batch [Lower Sugar] Cranberry Sauce
Everybody needs a good cranberry sauce recipe for the coming holidays. This is the one I’ve been making weekly (yes weekly) this season for my family…
We are avid Costco shoppers (like every week nine years strong) and when the fresh cranberries hit the produce case Noah and I were ecstatic. We love a good cranberry sauce and since I’m on WW again, I modified one of their oldie-but-goodie recipes for a more kid-friendly version that offers more cranberry sauce per portion for momma.
What you Need
32 ounces fresh cranberries
1 cup water
1 heaping cup unsweetened applesauce
(I’ve been using 3 of the individual lunch box size cups of Motts)
1 cup orange-colored jelly
(I like Smuckers Sweet Orange Marmelade best)
1/2 tsp cardamon
1 tsp cinnamon
How to Make it
- Rinse cranberries well (and pick out any icky ones from the bunch).
- Combine cranberries, water, jelly, and spices in a large stock pot.
- Cook on the stovetop at a high heat, stirring occasionally until the cranberries start to pop.
- Turn off heat and allow to cool.
- Serve warm or chilled.
The Big Batch [Lower Sugar] Cranberry Sauce yields 20 1/3 cup portions of cranberry sauce for 2 WW points each.
For an extra fun twist – at 2 cups of golden raisins and a sprinkle of nutmeg to the pot.
