Banana Bread Oatmeal

One of our goals for 2016 is to eat healthier.

It’s no secret that Mike and I need to lose weight, but we are beginning to discover that it matters how we lose it as well. I specialize in finding the wiggle room inside the structure of a diet plan to eat the things I love (read anything with sugar) and still drop the pounds. It’s true I may get myself into a smaller size, but in reality I’m not fueling my body well.

This is a very serious admission for me.

I love to eat, and bake, and would gladly, happily, eat my calories in cupcakes every day. But this does nothing for my body, and nothing for my children. I don’t want them to struggle with food the way we do.

So I’m trying – to be better for them, and better for me.

Banana Bread Oatmeal

Overhauling our entire diet is an incredibly overwhelming thought.

So I’m starting with breakfast, and I’m starting small. One of the meals we’ve introduced into our morning routine is this Banana Bread Oatmeal. Chia seeds are a super food that in addition to all the wonderful health benefits and nutrients they offer, help curb hunger. Flaxseed is another great nutrient addition.

This oatmeal is easy to make, tastes great, and has kept me full through lunch. This year we’re purposing to celebrate even small steps. This is one of them.

Banana Bread Oatmeal

Serves two

What you Need

1 cup fat free skim milk
2 mashed bananas
1/2 tsp cinnamon
1-1/2 tsp vanilla
1 tbsp chia seeds
1 tbsp flaxseed
3 tbsp brown sugar
1 cup oatmeal

Optional Ingredients
2 tbsp sunbutter (or other nut butter)
Raisins
Slivered Almonds

How to Make it

  1. Combine milk, bananas, cinnamon, vanilla, chia seeds, flaxseed and brown sugar mixing well.
  2. Warm over medium heat, stirring often, until mixture starts to bubble on the sides.
  3. Add oatmeal and cook until soft.
  4. Add any additional ingredients you like.
